Quick Garlic Chicken

Garlic...Mmmmmmmm.

I will admit to a certain obsession with garlic. It's one of my favorite savory flavors and it works well in so many recipes. Plus, when you and your husband both eat the garlicky dish, the offending garlic breath is pretty much cancelled out. Just sayin'.

This recipe is quick and easy, but the taste is PHENOMENAL! The coating gets a little crispy; the chicken stays nice and juicy; and the parmesan/garlic combination just melts me to my core. I served this with a nice parmesan risotto, fresh green beans and a green salad, but I think it would also be delectable served parmesan chicken style with pasta sauce over noodles.

If you like garlic, you really MUST try this. We'll think of all the good things about garlic and call it health food instead of comfort food if it makes you feel better. :)

2-3 teaspoons of crushed garlic (Don't skimp! Trust me, you'll hate yourself if you do!)
1/4 cup olive oil
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves

Preheat oven to 425. Warm the garlic and olive oil to blend the flavors. In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken breasts in the olive oil/garlic mixture and then into the bread crumb mixture.

(Give 'em a good coating. We all know the breading is the best part anyway!)

Bake in a shallow baking dish at 425 for about 30-35 minutes.
