Easy & Amazing Zesty Italian Beef

I wish I had a picture of this one. But don't worry, I'll make this recipe soon just so I can post a picture. It's because I'm so nice...not because this is one of my absolute favorite recipes. Yep, I'm a sweetie.

This is recipe is awesome for casual get-togethers for many reasons.

1. You start it the night before in your crock pot. That gives you all day the next day to finish up that last minute cleaning. Or, in my case, to just procrastinate about the last minute cleaning that you won't seem to get to.

2. It makes a BUNCH! Serve it up with some chips or potato dish and a veggie tray and your set.

3. It makes your house smell wonderful and your friends will think you've been slaving all day. Then the next time you go to their house for dinner, they'll pull out some yummy recipe that requires lots of work that you don't have time for and you get to benefit for it but later you feel guilty because they think that this recipe is tough, when it's really not, so you confess and later make another meal that's really, really involved as penance... Uh, I mean, you will immediately share how easy this recipe is and they will love you forever for having a simple recipe in their arsenal. Yeah. That's what I meant.

Zesty Italian Beef

5 lb roast --I often use bottom round, but will settle for whatever is on sale. Trim away as much fat as you can.
1 heaping teaspoon sugar
1/4 cup red wine vinegar
2 package Good Seasons Zesty Italian dressing
1 jar pepperocinis
1 cup water
salt and pepper to taste
Dinner rolls or Sourdough rolls.

Salt and pepper the roast before placing in crockpot. Combine all ingredients, except pepperocinis and pour over roast. Cook for 1/2 hour on high. Reduce to low and cook about 6 or 7 hours. (I often start mine before bed for dinner the next evening.) Take the roast out and shred meat. Return to crock pot. Pour pepperocinis and juice into crock pot. Cook 2 or 3 more hours. Serve on dinner rolls or sourdough rolls.
